I'm assuming your friend gave up gluten/wheat, and not just bread?

If so, a crustless fritttata and a fruit salad could be lovely.

If they aren't doing low carb, Paleo/Primal, aren't Vegan, or diabetic I suggest chocolate covered strawberries;):popc1:.

I like poached eggs, but like my soft so I always want bread with them. If they are harder than med. then I prefer them scrambled or hard boiled.

Poached eggs are great over cooked tomato and/or spinach to soak up the yolky goodness. Hollandaise 1-2x a year if I'm feeling ambitious.

I would probably do a crustless quiche or frittata with a fruit salad.

I have a breakfast casserole dish we do for brunch or holidays sometimes. http://windsorpeak.com/vbulletin/showthread.php?p=2373385 I definitely like to pair it with something with acid/citrus, so a nice fruit salad with pomegranate seeds (if in season) and citrus included works well. The casserole reheats pretty well.

eta: if the person can do almond or coconut flour you could do muffins or quickbreads with that, depending on why they are going without bread.

I love eggs, so I'd do an omelette or fritata.

I hate poached eggs, or any eggs that aren't fully cooked. I'd probably stay away from anything runny.

I'm GF and we do breakfast snack at work each week. I've brought GF muffins, GF apple pie, and last week GF crust less chocolate vanilla cheese cakes that were to die for and so super easy. We've also done fruit with yogurt dip, cheese with grapes, and crustless quiche.

for someone that likes bacon/eggs, have you seen the muffins with bacon wrapped in the muffin tin then egg & cheese stuff put inside & it's baked? they look awesome. i've seen them on pinterest & fb, but haven't had any, but they look good.

I made these yesterday and they are delicious! Gluten and dairy free. Even my kids love them. You can make muffins or a bread loaf.

Sorry, just seeing this. I'll come back later to post the recipe as it's in my cookbook at home. Super easy with basic ingredients.

ETA: Wait! Here it is. This is the exact recipe (the pic in the blog is the cookbook I have). http://myglutenfreelife21.blogspot.com/2013/01/mini-swirl-cheesecakes_1.html Just be sure to use a muffin tin that you know will fit inside a baking dish for a water bath. I made the mistake of not thinking ahead and used a muffin tin that has wide set handles that a storage lid connects to because I was going to transport these to work. It made the water bath part so much harder because the pan didn't sit down in the baking dish far enough.
