I just found this (http://www.bobsredmill.com/recipes.php?recipe=7077) recipe and think it might be a good one for me to try with DD, because I can whip it up quickly with whatever is on hand. But is 1 minute in the microwave enough to cook the egg? And would canola oil work?

Yes, 1 minute will cook the egg. Canola oil should be fine.

I hate the texture of microwave muffins and cakes. If she does too, you can bake them normally and freeze. They thaw quickly on the counter, or barely zap them in the microwave.

There are some old threads with one minute muffin recipes. I have to do more than that because we have an ancient built in microwave. If you are new to using flax, definitely go for golden, as it has a less strong taste.

You might also try cutting it with some almond flour if she doesn't like the grassiness of flax. I don't mind the taste of flax but some people can really taste it.

The lowcarbfriends forum has a long, long thread with variations on the one minute muffin recipe.
