DS is ONE! (This is soooo crazy to me).

As usual, I'm doing most every thing last minute. I didn't do one dot of planning until a week ago and not one bit of shopping until a few hours ago for his party TOMORROW. It's only family so low key but I still want to make it fun.

I want to make a sheet cake kind of like this construction cake: (http://www.onelittleminuteblog.com/2011/05/tractor-birthday-party/)(It's a bit over half way down the page). Except I want to do carrot cake with cream cheese frosting. I thought a colored frosting would look better with the graham cracker "dirt" so I wanted to try to color the frosting with carrots. I'm not picky about color....yellow, orange-ish, brown, off-white. I just figure anything other than pure white would look better for this.

Has anyone done this with carrots? Should I cook them and blend them or just blend them raw in the Vitamix? I figure a bit of carrot flavor will be fine but I obviously don't want a super strong carrot taste in the frosting, ykwim? Anyone??

Here's a couple other links for reference construction cake one (http://media-cache-ec4.pinimg.com/originals/72/14/09/7214099cb5bb0728cd41bc407cd62ff3.jpg), construction cake two (http://www.flickr.com/photos/22091136@N00/2811848876/lightbox/).

Love the theme. You can always try it the carrot juice. I've colored frosting with berries to turn it pink before.

Carrot juice would be easiest....but I already made my grocery store trip....I think I will try raw carrots in the vitamix and see what happens. I will keep you guys posted.

I will be interested to see how it worked out. You can always add berries too to turn it brown, but it might look a bit unappetizing.

Maybe try a teeny bit of turmeric? Like a really teeny bit bc you don't want that flavor in the cake of course but the color is pretty strong so perhaps just a pinch is needed?

why not cocoa if you are ok with brown?
