I bought one of her cookbooks at a yard sale, but it seems she uses a lot of ingredients I don't generally keep on hand and she uses very small amounts of them. Are the recipes any good?

I've used it to make alternative, low calorie versions of treats. I know a couple of people who subscribe to her for the same reason. Those have all turned out yummy.
I haven't tried to make any full meals from Hungry Girl.

I have one of her cookbooks and don't use I often just for the reasons you stated.

I like her egg in a mug recipe. However, I just use regular eggs. Not egg beaters.

I made one of her recipes involving the tofu noodles she raves about. They were totally disgusting (and I like tofu), so no interest in trying other of her recipes.
