View Full Version : Low-ish carb sweet treat that is shippable?

We are preparing a care package for my uncle who is diabetic. I just baked the peanut butter cookies from the healthy indulgences website, which are great, but so crumbly that I know they won't survive shipping. Any other suggestions? I am having the kids make cards/pictures and I will probably include a couple of bags of nuts from Trader Joe's - the dark chocolate covered almonds are also lower carb. Probably a magazine or two as well.

I have most low-carb baking ingredients - good almond flour, erythritol, stevia, xanthan gum. Honestly, they don't have to be super low carb, so a lowish sugar whole-wheat treat would work too. I mainly am just looking for something that will stay fresh and not disintegrate or melt during shipping. If you have ideas for non-sweet treats that are not perishable or crumbly, that is great too!

I love this cake, but not the icing. Just plain. You could make into mini loaf cakes or mini bundt cakes if you didn't want to do a large one. I can't find the link, but the vanilla cupcakes made with beans on Healthy Indulgence's website are really good. I eat them plain (how you could ship them) or top them with a smidge of peanut butter.

For non-sweet stuff, kay's naturals protein chips crispy parmesan. I buy in bulk at amazon but I have seen individual packages at Walgreens. The Go-Picnic meals (http://www.gopicnic.com/)(get at target in the section by mac and cheese) aren't technically low carb because there is a small piece of candy and some dried fruit in the mixes, but they are neat treats with good protein and my diabetic relative can eat them.
