I remember reading a post about a type of Lego set that was good for beginners. If I remember correctly it was a set that could make 2 or 3 different items from one set. Does anyone know what sets this would be? TIA

I think I read here that brick master sets are good for beginners. They're a book with bricks and you can make a few different things with the bricks.

I like the small creator sets. They are $5-6 each and you can make three different models from them. Ones like this:
