Gingerbread men for class party... Can I make them ahead of time?

I have to make 22 gingerbread men for DDs class holiday party next Friday. I would really like to make them this weekend when Dh can help versus messing with them on a weekday afternoon while dealing with all 3 kids. Can I make them ahead and freeze them??? Will they still taste ok????

Yes, they'll be perfectly fine. Plus they'll be covered in icing and candy. I don't think the kids would care! ;)

I honestly thought most homemade cookies, even just covered, will last WEEKS! Store bought last months!
