View Full Version : Need shredded chicken sandwich recipe

We are having DD1 First Communion on Saturday with dinner afterwards. We are having sloppy joes and I was planning in a shredded chicken recipe I have made before but of course I can't find he recipe. I thought it was chicken rio but now not so sure after looking at the ingredients. I didn't want to do BBQ chicken as mine never turn out great (not much flavor). Anyone have a good recipe to feed a bunch and can be made ahead of time? There will be about 40 people for dinner. Plenty of sides but I like to have 2 meat options.

This is basically what i do--i like sweet baby ray's sauce.

:yeahthat: Cooking Light has a fantastic BBQ shredded chicken recipe that I used to make as often as I could. Until I discovered Sweet Baby Rays. Now I just throw the chicken in the slow cooker for the day, then shred and smother with SBR. It's fantastic!

The secret to making it easy: i shred the chicken in my kitchen aide mixer, on low just for a short while.

you are going to have BBQ with your DD wearing a white dress?! (Congrats to your DD, my DD1's first communion is this Sunday as well!)

I essentially make this balsamic mustard chicken (scroll down for recipe)/ (http://everydaypaleo.com/budget-friendly-balsamic-mustard-chicken-and-oven-roasted-bacon-veggies-by-erika)but I use more chicken and use Dijon mustard (but spicy brown should be good too) and I add some rosemary and thyme and I cook in my crockpot on low for 6 to 8 hrs. I also slice a whole onion and cook with the onion on the top. It is great with any type of bread or tortilla or just served with rice, pasta, or orzo.

I will double check my ingredients when I get home tonight.

This one is good according to DH. Chicken was very tender when I pulled it apart with a fork. You could serve it with a couple of different sauces on the side.

It has only salt, pepper and garlic powder. Make sure you use enough liquid - mine had gotten completely dry, but I caught it right away and added more liquid - it still turned out perfectly.

Thanks for the ideas. I will think about which way I want to go. I found a recipe for pesto chicken I am thinking about too. One other reason I didn't want BBQ chicken is because the sloppy joes are like BBQ too.
Either DD1 will change before dinner or she won't have either main dishes. She not a big fan of meat or main entrees.
I am more worried about getting through mass without a meltdown or a big embarrassment, that if I can make it back home for dinner I will be much more relaxed.

Good idea! Easy to get croissants from Costco. Different from Sloppy Joes. Our Costcos are selling the rotisserie meat off the bone, and that makes good chicken salad if you don't have time to cook the chicken.
