Any favorite recipes out there? Also helpful hints are appreciated. I really want to make the crust from scratch. What are the best apples to use?

I am using this recipe for our apple pie this week http://allrecipes.com/Recipe/Apple-Pie-by-Grandma-Ople/Detail.aspx but not doing a lattice crust. :) A friend made us this pie and DH and I ate the whole thing - it was amazing!! I need a new butter-only (no shortening) crust recipe, I think I'm going to try this one http://www.melskitchencafe.com/the-only-pie-crust-recipe-tutorial-youll-ever-need/ but if anyone has a tried-and-true butter crust, please post! For apples I am using Jonagolds, maybe some honey crisp too.

I've been making this recipe for years. The crust is super easy and the pie is delicious.

I think it calls for too many apples though. I always end up making some applesauce with the leftover apples that won't fit LOL! I also use a combo of Granny Smith and a softer apple.

So I ended up doing an apple pie with a crumb topping , my sister recommended it. Turned out yummy except there was a lot of liquid in it after being cooked. I cooked it on Wednesday and then reheated it for eating the following day.

The King Arthur Flour Company recipe--on their website is the best I have ever made. It is a basic apple pie and I love it!!! The boiled cider adds amazing flavor. I have been baking apple pies for over 20 years and I love this pie.

Dang, I used it on my pumpkin and apple pies and it did not turn out well at all! It was really thick and tough. I was hoping for light and flaky - what was yours like?

I've been wanting to try this recipe. Did you use any type of topping? I thought about just using a second crust with slits cut in it.

Just to add another to the apple pie thread...

I made the King Arthur Apple Slab (http://www.kingarthurflour.com/recipes/old-fashioned-apple-slab-recipe) for Thanksgiving this year and everyone loved it. I just sprinkled (quite liberally!) with sparkling sugar and skipped the glaze. We ate it room temp (as recommended) but I think it would be delicious warm.

The recipe for Ople's Apple Pie was amazing! I did what you said, a regular top crust with slits, as I had no time or energy for trying the lattice top. ;) The crust recipe I tried didn't turn out well, but the apple pie recipe was great. I did read the reviews that are on the main page and added some vanilla and spices as they suggested, and also poured the caramel-y sauce over the apples rather than over the crust. I saved just a bit to brush on the top crust.

Thanks for the tips. Yes pouring it over sounded too messy indeed. Think I'll give it a try today using frozen crusts. :)

I made this for Thanksgiving and everyone raved about it. I'm going to make it again and tweak the assembling:

1. The pie pastry stuck a bit to the pie plate due to the filling making it soggy. So I'm going to grease pie plate well, make sure there's some flour on the pastry side that goes into the plate, then put an egg white wash on the pastry. I might mix a little flour and cinnamon/sugar and sprinkle on the pastry before put the apples in. I'll also preheat a baking pan to put the pie dish on. If this doesn't help, I'll pre-bake the pie crust next time.

2. Don't boil the syrup too long, it gets too thick.

3. I'm going to put the apples in the pie crust, then pour the syrup over the top.

4. I do the lattice crust top, then I'll do a milk wash and sprinkle with a cinnamon/sugar mix. My lattice is really simple. I roll out the pastry, cut about 1/2" thick strips then I just put the strips at intervals vertically across the pie, then horizontally across the pie. I don't interweave them. I found it easier than a top pastry crust.

My syrup was too thick and it didn't look great over the lattice top. but it was still yummy!

I read some of the reviews that mentioned using an egg wash on the bottom crust to keep it from getting soggy. Can you tell me how to do this? I'm not much of a baker. :)

Sorry, I didn't see this. You beat an egg white, then brush that onto the bottom pie pastry.
