Pascal Potatoes have been a fav of ours over the years.

I use much more garlic (enough to sprinkle across the bottom of the baking dish).

I'm a pretty good cook but I haven't been too successful with these. Now, I buy them at Costco. They are so good and the ingredient list isn't weird. The brand has "bistro" in the name. Big fan.

Wish I asked before! Now I have a big humongous 5lbs bag of potatoes along with other basic stuff to make it. I hate hate to go Costco day before Xmas eve too...I'll keep this in mind for next year!

If you don't mind fennel, this Barefoot Contessa recipe for potato-fennel gratin is awesome! We get lots of compliments whenever we make it for company.

I've been using this one for many years (I use whatever mushrooms I can) - very rich, easy (night before) but DELICIOUS:

I make scalloped potatoes every year. It's easy and everyone loves them. I take a 9x12 Pyrex or Corning Ware dish and grease it with butter. Slice four or five baking potatoes thinly. Chop up a lot of garlic , have salt, pepper, nutmeg and heavy cream ready. Throw a little minced garlic on the bottom, do a layer of potatoes, cover w heavy cream, salt and pepper a little more minced garlic and a sprinkle of nutmeg. Do that until you reach about a 1/2"
From the top of the dish. Cover and bake at 350 maybe 45 mins or so, uncover and let the top brown maybe 15 mins. I just cook til tender. Put on a cookie sheet in case it bubbles over. Best potatoes ever!

I have made a recipe that I believe I got from Cooking Light that is a truffle oil scalloped potato you make in a large cast iron or nonstick skillet and flip over onto a platter to reveal a beautiful presentation of circular potatoes. It can be made dairy-free as well with Earth Balance spread. It's so yummy. http://www.myrecipes.com/m/recipe/truffled-pommes-anna

We eat a 3-cheese version that is to-die for! It includes blue cheese, just a heads up. https://docs.google.com/document/d/1fWKXN_bO_GqPx08TPhbSQ_hR1qWoSz2QnWgYw5V3jNM/edit?usp=sharing

This is at all holiday meals....
The Cheese Potato Recipe: I usually double this recipe as everyone loves it and it is great for leftovers.

2 lbs frozen hash brown( no red peppers).
1 can mushroom soup (low sodium).
1 pint light sour cream.
2 cups shredded cheddar cheese.
2 tablespoons or more of minced onion

Defrost potatoes slightly. Mix all ingredients together in a large bowl. Put in a 9 x 13 or a pan of your choice.
Bake at 350 for 2 hours. Can make in the crockpot -4-6 hours on low
