title says it all - not sure how I got roped into bringing the main course when it's not at my house, but oh well. I don't have much experience w/ making soups. i do have a vitamix, if that helps. help! ;)

Butternut squash soup with chipotle cream? Easy to do in the vitamix, you can keep warm in a crockpot. eta: not sure if I would do that as a main dish item though, now that I reread your post.

I'd probably make a broccoli cheese soup. I usually puree about half and leave the rest chunky.
