My family is partial to dark meat for chicken, and I am looking for some tried and true recipes. I feel like I always make the same chicken dishes each time. Caveat- I am not a fan of cheese in sauces or seasonings.

My family loves this recipe. I substitute Italian sausage for half of the chorizo because my kids can't handle any heat, and double the orange zest. The chicken comes out so juicy!

I sprinkle roasted garlic salt (Lawry's brand, I think) on top before placing in the oven. I also sprinkle some on the other side when it's time to turn the chicken over halfway through. The roasted garlic salt makes the dish extra yummy!

When I'm desperate for something incredibly quick, I dump a bag of frozen cauliflower and broccoli and a bag of frozen mixed veggies in a big pan, throw in chicken thighs, grab a bottle of tikka masala sauce http://www.thehotsaucestop.com/pataks-tikka-masala-curry-paste/ and simmer for about 15 minutes. I don't usually use prepared sauces, but this is one I keep in the house for emergencies!

Another prepared sauce dish is chicken thighs with Soyvay Island Teriyaki. I got that idea from this list. I bake it in the oven. It's another meal of desperation but very tasty!

A meal I don't make anymore but used to LOVE is apricot chicken. This dish is really high in sugar and sodium and uses all processed stuff, but it's seriously yummy! Mix together a packet of onion soup mix, a jar of apricot jam, and a bottle of dark red salad dressing like Catalina. Pour over chicken thighs and bake in a 375 degree oven for at least an hour to an hour and a half. The sauce is sweet and caramelizes on the chicken. You can make it with boneless/skinless or bone and skin.

This thread had me thinking about mixing chicken and sausage. I found a recipe and made it last night, but I don't like thighs so I used cubed chicken breast. The chicken was waaaay too dry, then my husband pointed out that the recipe calls for chicken pieces, which typically means bone-in thighs, etc. I think it could be very good with darker meat! I also cooked the sausage on the stove too long. I steamed it whole with a bit of water and a lid, then sauteed to evaporate the liquid. Next time, I won't evaporate it; I'll just steam for a few minutes then slice while it's still a little raw. I also used dried thyme instead of rosemary. Oh, and I used italian sausage instead of bratwurst because that's what I had around. (I feel like one of those reviewers who changed around the entire recipe and then gave it a low score...except I give it a high score even with the dryness! It was very tasty.)
