For Christmas Eve, I usually make an oyster stew and one other type of soup. I need inspiration for the second type of soup. Please recommend your favorite soup recipe!

I love soup! This is my favorite- chicken tortilla soup http://www.chowhound.com/recipes/chicken-tortilla-soup-30472 I add a can of rinsed black beans to it.

I make a ton of soup just free style with some sauteed or roasted veggies, beans, good stock, can of tomatoes and add some pasta (just added to individual bowls so it doesn't turn to mush). I also do a butternut squash soup and a carrot soup simply by simmering one of those veggies in chicken or veggie broth until tender then pureeing it with some sauteed onions and shallots. Dash of cream at the end and seasonings like salt and maybe cinnamon and nutmeg.

That chicken tortilla soup looks delicious! I have made PW's broccoli cheese soup and agree it is great!

I got this recipe off a thread here a couple of years ago. We love it! Its amazing!!! My dh hates onions so I leave the onion out. I also usually just use one can of chilis.

I love chicken soup

I put a chicken carcass - either from a chicken I roasted or purchased as rotisserie, or WF sells carcasses for soup - in my slow cooker with several carrots and stalks of celery, at least three or four cloves of garlic lightly crushed and about three big pieces of ginger and filled with water. I let it cook on low for at least 24 hours.

Then I strain the broth.

In a large soup pot I sautee minced garlic and ginger...just "a bunch"...in some olive oil until fragrant. then I add cleaned and cubed pieces of chicken breast. once they are a bit cooked I add in a ton of chopped carrots, celery and turnip. let it cook for about 5 minutes and then i fill pot with stock. bring to a boil, then lower to a simmer and let the chicken and vegggie cook until done. I never add salt to my stock, so I always salt the soup

Once it's done, I add a bag of baby spinach and stir until wilted.

in fact, this is what we're having tonight - yum! :)

I love butternut squash soup, but am picky. I've tried many recipes, but this is my all-time favorite (http://allrecipes.com/recipe/77931/creamy-butternut-squash-with-cinnamon-soup/).

Insta pot soup chicken Gnocchi ( like they serve at olive garden)


3Tbls butter
1 lb chicken cubed
3 Tbls flour
2 stakes celery diced small
4 tsps chicken base ( I use better than bouillon )
4 cups water
16 oz package of dry gnocchi dumplings ( they are sold in the pasta isle)
1 tsp dried thyme
1 bay leaf
1tsp onion powder
1 Tbls parsley flakes
3/4 cup half and half ( or heavy cream)
Heat butter in your pressure pan
Coat chicken with flour and saute for 2-3 minutes
add remaining ingredients EXCEPT for half & half
Secure lid and pressure for 7 minutes
release steam stir in half and half

Kale and white bean soup (vegan and GF)

Sauté 1 chopped onion and a few cloves of garlic until onion is translucent. Add in 1 can of chopped tomatoes, 1 can of white beans (rinsed), a bunch of kale coarsely chopped, 6 cups veggie broth, salt, pepper and Italian seasonings. Cook in instant pot for 10 min on high pressure. Serve with Parmesan cheese and crushed red pepper flakes if desired (not vegan if using Parm cheese). Can be made on stovetop too.

I've done a similar soup for meat eaters with italian sausage.

And this - I cut the dairy and calories by doing half milk and half chicken broth, and I usually just boil the potatoes (as I would for mashed) in the broth.

Our grocery store was offering free mushrooms with the purchase of a bagged salad, so I had 2 containers of mushrooms to cook tonight. This is Julia Child's cream of mushroom soup recipe. It was delicious!!!

I like to add beef and extra crushed red pepper for a good kick!

Sweet and Sour Cabbage Soup

Ingredients
3 tablespoons olive oil
2 onions, chopped
4 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/4 cup plus 1 tbs balsamic vinegar
1 tablespoon brown sugar
1 green cabbage, chopped
2 cans stewed plain tomatoes, cut with juice
7 cups chicken stock
salt
ground fresh black pepper, to taste

Directions
In a large pot heat olive oil over moderate heat and cook the onions until translucent.
Add the minced garlic and crushed red pepper flakes and cook, stirring for 1 minute.
Stir in the balsamic vinegar and the brown sugar and bring to a simmer.
Add the cabbage and stir to combine.
Add the tomatoes and the chicken stock and bring to a simmer.
Season with salt and pepper, to taste.
Simmer the soup uncovered, for 30-40 minutes until the cabbage is very tender.
Taste soup and adjust seasoning with a bit more balsamic vinegar, brown sugar, salt &/or pepper.

I made the chicken tortilla soup last night and it was fabulous! I've been hunting for a good chicken tortilla soup recipe and this one is perfect. Thanks for sharing.
