This! Haven't ever made it before, but looked good. Everything I've made from her has been great so far, especially the Kale Quinoa soup. My DH asked me to make it again this week and we just had it last week.

White Chili. The only change I make to this is I cook a bone in chicken breast and use the chicken from that (I've heard rotisserie is fine too) and I use plain greek yogurt in place of sour cream. Add half a sweet onion, chopped...too. Low in the crockpot for 3-4 hours. At about hour 3 1/2 I make the stovetop step and add the greek yogurt. Cook about 45 min more (ish).
I make it once a week usually.

Greek pasta! Everyone in our house likes this one. I have tweaked it for our family: use 1 1/4 lb ground beef (Costco pack), use fresh spinach, increase pasta to 2 cups (8 oz) and add an extra 1/2 c water and another T of tomato paste to compensate for that. Sometimes we add sliced black olives and/or extra feta too.

Crispy cheesy chicken, steamed carrots, and creamed spinach (previously made and frozen).

We were supposed to have breakfast. CF pancakes, spinach quiche, and fruit, but I do not have enough eggs and already had thawed chicken so we'll have the breakfast tomorrow night.

Because it's Leap Day, part of me just wants to do something like a sundae bar for dinner. Some sort of rare treat. After school snacks will be where the nutrition is at. :) Maybe I'll go with crepes. I can have ham and cheese out or whipped cream, fruit and other stuff- let them choose.
Ideas:

I've been big into soups and chilis too.

Homemade chicken nuggets or grilled chicken sandwiches.

We are having leftovers. Pork roast with broccoli (broccoli cooked for myself and DH, but raw for the kids), and I will probably have some green salad as well.

slow cooker pork stew - pork, potatoes, carrots, celery, garlic and ginger. never tried before, but giving it a shot since we like all the ingredients and i was feeling in a rut. picked up a magazine of soups and stews at WFs a couple of weeks ago

What recipe do you use for the soup? I was just going to look for an IP lentil soup recipe.

I use this one, which I've found to be pretty flexible, so I've changed up the veggies I've used without any trouble.

I love my spiralizer, but have never made an enchilada casserole. I did a quick google search and found one with sweet potatoes. Is that what your recipe uses?

Beef tacos. :) I don't use taco seasoning. Just brown the meat with a little chili powder & then add about an entire jar of picante sauce into it. Then cook that down. The kids like it & I figure I'm getting a little extra veggies into them with the picante sauce. :bag

Skinnytaste has one with spiralized sweet potatoes that I love.

I made a version this turkey bolognese the other night and put it on the menu again this week as it was easy and the family liked it. My switches were no bacon (didn't have any), used ground chicken instead of turkey and we had it over whole wheat pasta.

We're having tacos tonight. Went grocery shopping this morning, have a late afternoon dentist appointment and just need something easy. I'll be more creative the rest of the week!

I had planned on grilling burgers b/c it's unusually warm here today (60 in MA in February!). But now it started raining so I'm not sure.

We have our dinners catered. They were just dropped off a half hour ago. Tonight is shrimp and sausage gumbo. He always throws some chicken in there too. It looks good.

That Whole Foods bouillabaisse sounds fantastic! Wish we had a Whole Foods around here. :(

Kindra, that kind of chicken is also great when made with Trader Joe's Pineapple or Cowboy Salsa.

I made my mother-in-law's version of shepherd's pie...its such a yummy comfort food. It's sliced potatoes/onions, then a layer of browned meat (with mushrooms and soy sauce and condensed mushroom soup mixed in) and then another layer of potatoes and onions on top. The bottom layer of potatoes becomes soft and almost buttery from the meat cooking onto it, and the top layer is crispy. Deliciousness :)

Tonight was salad with leftover chicken and a combo of roasted and fresh veggies. And some sourdough croutons I made with leftover sourdough toast...YUM!

No, it uses spiralized carrots that are then "riced." Let me see if I can find the recipe online since she has a blog.


ETA: This is the recipe except the one in the cookbook has both cheddar (1 c) and pepper jack (1/2 c) cheese. I also add a full pound of ground beef because I don't need it to be vegetarian. I used diced tomatoes with green chilies instead of the separate jalapeno.

If you want to get extra veggies in your taco meat try this recipe. It's from my Frugal Paleo cookbook and it's awesome! So many veggies! I don't make my own taco seasoning for it and just use the TJ's one plus extra cumin.

I am intrigued! Do you have all dinners catered nightly? Is it a food delivery service where there are a few choices and you pick? Or do you order exactly what you want, and it is prepared for you?

We had leftover spaghetti bolognese tonight.

A friend of ours who is a retired chef makes meals for us and delivers them on Mondays and Thursday's. We have an old refrigerator in the garage where he brings drops them off. He brings meals for 3nights. This week is the gumbo with rice, roast pork and bean burritoes with toppings on the side, teriyaki chicken eithr steamed rice and stir fried veggies. He also made mini muffins for a snack/quick breakfast for the kids and each week he brings different chopped vegies in a chip-n-dip container so I can make salads for lunch. He'll bring another delivery on Thursday. He makes what he wants or what meats and vegetable are fresh in stores. In the summer he has a garden and uses what is ripe out if there. It has been working well for us and for the chef who, according to his wife, needs more to do now that he's retired!

I made Chicken Cordon Bleu with this recipe & there were no leftovers!

I stop after the 2nd step and do not make the sauce. I browned the chicken in a little butter & olive oil then poured in the wine, covered and cooked for 15 minutes. I use thin cut breasts and do not pound them.
