I think we all get stuck in a rut when it comes to dinner, so I'm posting here to get some new ideas (and maybe share one!!)

I found this recipe the other day and tried it and we ate every last drop, plus it's easy:

White Chicken Enchilada Soup

I didn't use the cumin (don't like it) or coriander (didn't have any) and it was still yummy and easy. I used shredded rotisserie chicken and added some cheese at the very end. I always feel accomplished when I make soup from scratch!

And just because I happened to really like this, I'm throwing in another recipe that I made for our Superbowl party:

This has recently become my favorite. I cook it in my instant pot and the whole family is happy. I usually serve with roasted cauliflower.

my entire family loved this, and cooking pasta in the microwave was great, Grilled Chicken & Pasta:

I used gluten free pasta and it turned out perfectly.

I also made a great Mexican lasagne, but I have that recipe saved on my iPad so I will post it when I get home.

I love the Deep Covered Baker.

Old Fashioned Beef Stew in the IP

Sauteed stew meat until brown, set aside
Sauteed onions, carrots, celery, and garlic with EVOO
Added about 6 red potatoes, chopped in medium chunks
Add stew meat
Added a box of low sodium beef stock
Season with pepper, and a little parsley
Set IP with the Meat/Stew button
When finished add 1 Tbsp corn starch (dissolved in 1/4 cup water) to thicken

It was super easy and totally delicious

Instant Pot meatballs: http://www.hippressurecooking.com/pressure-cooker-meat-balls-in-tomato-sauce/ I substituted 1/2 cup buttermilk and two pieces sandwich bread (soaked together) for the milk & breadcrumbs and minced fresh parsley for the dried oregano. I used slightly less than 1lb ground beef (because that was the package size I had) + 2 hot italian sausages (around 2/3lb). One 28 oz can of crushed tomatoes and cut back the water to 1/2 cup. When I reheated the leftover sauce I used these directions http://www.seriouseats.com/2016/02/the-right-way-to-sauce-pasta.html and it definitely made a difference (IMO, DH could care less)

The slow cooker chicken chile verde I linked in my dinner post was fantastic. I used tj salsa verde with the spice it up option. My kids ate it wrapped in a tortilla. I also had leftover pasta so I made baked spaghetti. First, I cooked 2 pounds of ground beef. Then I coated the leftover pasta with a mixture with 2 eggs, melted butter and Parmesan. Then I layered pasta, meat and sauce in that order, with extra cheese on top. Great way to use leftover pasta. My kids loved both!

This is our new favorite Instant Pot recipe, based on an America's Test Kitchen recipe. I used an immersion blender at the end, to purée the onions and mushrooms into the gravy.

to 4-pound) boneless beef chuck-eye roast, trimmed
Salt and pepper
1 tablespoon vegetable oil
1 onion, finely chopped
2 tablespoons tomato paste
1/2 ounce dried porcini mushrooms, rinsed and minced
2 cups beef broth
2 pounds small (1 to 3 inch) Yukon Gold potatoes

Great thread! I made the balsamic chicken last night and the White Chicken Enchilada Soup tonight. Both were fantastic! Thank you.
