View Full Version : Recipes for boneless, skinless chicken THIGHS?

Title says it all! I'd love to be able to make ahead by a few hours or a few days, if possible, but even "make and eat" recipes are welcome. Healthy is better, but I'm open to suggestions. Thanks!

I've also used Patak's Tikka Masala Curry sauce with mixed veggies and chicken thighs, though I prefer breasts.

I'm pretty sure you can make most recipes that call for breast meat with thigh meat if you like the taste and texture of the dark meat.

Or I would season the thighs and put in the crockpot. Then I would shred and put into tacos or on top of tostadas. Just add shredded lettuce, refried beans, sour cream, and salsa.

I don't have any specific recipes, but chicken thighs are great for the slow cooker -- they stay moist a lot better than chicken breasts.

Well, confession time: I have NEVER used my slow cooker for anything other than keeping food warm at a party! Any recommendations for preparing chicken thighs in the crockpot??

See my Panama "pork" recipe above. It's good, and it's for the crockpot. I've always made it with chicken, because we don't eat pork.

The balsamic chicken I linked above is a crock pot recipe. You basically dump everything in together and turn it on.

I use them in the Rachael Ray magazine recipe for slow-cooker chicken and dumplings (http://www.rachaelraymag.com/recipe/slow-cooker-chicken-dumplings/). (Because it's creamy comfort-food, I wouldn't make it in summer! Also, I cheat and use a small can of refrigerator biscuits in lieu of the baking mix/milk for the dumplings.)

I also use them instead of chicken breast in salsa chicken - 1 (15oz) can black beans, drained & rinsed; 1c frozen corn kernels; 1 jar of your favorite salsa - cook on LOW 7-8hrs.

I have subbed them out for chicken breasts in Giada DiLaurentiis's recipe for chicken parmesan (http://www.foodnetwork.com/recipes/giada-de-laurentiis/chicken-parmesan-recipe.html) as well.

They'd also work pretty nicely in Lightning McQueen's Balsamic "Motor Oil" chicken (http://family.disney.com/recipe/lightning-mcqueens-balsamic-motor-oil-chicken) instead of chicken legs.

Definitely grill them (salt, pepper, a little oil; maybe brush with your favorite BBQ sauce toward the end of cooking.)
