View Full Version : Easy but "large" brunch ideas?

I'm hosting a brunch for 7 adults in a few weeks. I need it to be a fairly "large" meal, as there will be a large gap before any food is served again that day. But I also need it to be fairly easy/able to be prepped in advance. I know for sure I'll do an egg casserole (the type with potatoes, egg, sauasage that can be prepped the night before and just baked in the AM). What else would you serve along with it?

Crockpot oatmeal or baked oatmeal would be filling with minimal prep.

Mini muffins
Mini quiche
Fruit
Plain boiled eggs
Bacon and sausage links (precook and warm in oven with casserole)

We are doing brunch for 8 adults and 5 kids in 2 weeks. Menu is Pioneer Woman's French toast casserole, bacon, sausage, fruit plate with yogurt dip, and a gluten free cereal (for the gluten free kid eater), plus mimosas, juice, and coffee. All easy and the casserole and dip can be prepped the night before. Baking the bacon also will make it easier.
