favorite potato salad recipe?

i have a bag of russet baking potatoes that needs to be used up within few days, so i thought of potato salad. i don't make it often enough to have a tried true standby in my rotation.

hit me up with your favorites! we generally like ones that use little mayo vs drowning in it.

Honestly I'd do something else with the russet potatoes; IME russets tend to fall apart in potato salad & are better for things like mashed potatoes, potato soup, baked potatoes, etc. What about something like this? http://allrecipes.com/recipe/25665/baked-potato-soup-v/

My favorite potato salad currently is diced boiled red potatoes, add in some diced hard boiled egg, sweet pickle relish, diced green onion, mayonnaise, and some salt/pepper to taste. I also like to make something like this (http://allrecipes.com/recipe/83097/authentic-german-potato-salad/), but I always add fresh chopped dill to it.
