In addition to CrockPot Mondays, I've been cooking a lot of sheet pan suppers - your protein and side dishes are combined with seasoning (salt, pepper, herbs/spices) and sometimes a couple tablespoons of oil (or spritzes of cooking spray), stick everything into the oven and VOILA! in 25-30 minutes, you have dinner.

My family has tried two and liked them OK, but I'm always on the hunt for more. No dietary restrictions, but DH won't eat certain fish (he leans toward mild-flavor, firm, white fish while I tend to prefer salmon) and DD is hit-or-miss about chicken (though she likes pork chops fine.) Vegetarian is OK because even if I don't make it, it'll give me ideas moving forward.

We have tried this one:

Sheet Pan Brown Sugar Pork Chops (https://www.seasonalcravings.com/sheet-pan-brown-sugar-pork-chops/) (I subbed in sweet potatoes for squash, though, thinking DD would eat them; she didn't, I'll use squash next time)

And another one that called for chicken breasts, but I (1) didn't bookmark it (oops!) and (2) used pork chops instead because I don't buy chicken breasts if I can avoid it.

I'm looking at making this one (or something similar) while asparagus is still in season:

Anyone else?

I've made this a couple of times. My DC didn't like it much but DH raved about it. Need to make it next week. I used boneless skinless thighs by mistake and it was fine.

I've made some from the Sheet Pan Paleo cookbook and liked them.

We love this one: http://www.skinnytaste.com/roasted-potatoes-chicken-sausage-and/

I use sweet potatoes and the Aidelis Chicken Apple Sausage.

Love the leftovers with a fried egg on top for breakfast the next day.

We love these fajitas:

I also make them with shrimp instead of steak and they are delicious as well.

I unfortunately don't make as many sheet pan dinners as I'd like to because my current oven is too small to fit a sheet pan (waaah!). But when I had a normal sized oven, my family's favorite was a combination of chicken, sweet potato, regular potato (I liked Yukon), onion, garlic (chop cloves very roughly, too small and it will burn), carrot and apple. Toss with olive oil, sprinkle with garlic powder, salt, and freshly ground black pepper. Bake until it's cooked! We also made it with sausage (like the kielbasa type, we usually use the turkey version) which might fit your DD's tastes better.

I keep trying her recipes to get new ideas, but the way she combines some flavors doesn't always mesh with DH's palate.

She's my go-to for what to do with chicken thighs, but it is SO tough to figure out if the seasonings will work!

I think it could also work with pork chops, which DD will definitely eat.

I could skip the chopped garlic & garlic powder and toss with Wegmans Basting Oil (https://www.wegmans.com/meals-cooking/recipes/dressings-marinades/basting-oil-recipe.html), salt, and pepper ... thank you. What temperature do you set the oven to?

This dish is so yummy: https://www.nigella.com/recipes/spanish-chicken-with-chorizo-and-potatoes

I love Nigella.

How much chorizo flavor do the chicken thighs end up picking up? Most chorizo that I can find here is fairly spicy, which is fine for me, but rules DD and DH out. If it's a lot, I can always sub out a different fancy sausage, like Trader Joe's smoked chicken, apple, chardonnay links or something. (Those are the ones I use in this recipe for cassoulet (http://www.chopchopmag.org/recipe/french-cassoulet) to ensure it turns out flavorful but not too spicy for DD or DH. DD is hit-or-miss with it; DH whined that he's "not a big bean guy," but it's an easy and tasty recipe, so I'll plan to make it again in the fall.)

I forgot that I'd made sheet-pan fajitas using Williams-Sonoma's recipe (http://www.williams-sonoma.com/recipe/sheet-pan-fajitas.html) for Valentine's Day this year. DD wouldn't touch them, but DH liked it!

Good deal.

I like bone-in/skin-on chicken thighs right now because they're cheap.

The chicken itself doesn't pick up a lot of chorizo flavor IMO, but since my kids can't tolerate spicy foods at all, I make one pan with chorizo for me and DH, and one with Italian sausage for the boys. (The recipe actually makes 2 pans.) Happy kiddos and happy adults = win/win! I also double the orange zest because I like the hit of citrus in this recipe.

Thanks.

DD is so hit-or-miss with sausage of any type that it's good to know what's going on. It'd take chorizo and another kind of sausage (she likes the smoked apple chardonnay sausages) to make it work.

400! Usually cooks for about 35 minutes, but depends on the size I cut things.

Wow! This is amazing!! Made it sunday, leftovers today!! Cheap, minimal prep, and cleans up in 10 seconds (toss the foil and go).

Pretty much perfect (except DC's are on a chicken strike, but DH and I ate it up!)

What vegetables did you use? I made it last night, and it was really good, but all the veggies toward the outer part of the pan were charred beyond recognition. I used sweet potatoes, onion, cauliflower, and green beans. The green beans were a shriveled mess, and the cauliflower was so soft I could hardly get it out of the pan. Sweet potatoes and onions were delicious, though, as was the chicken. Next time I will cut things in bigger chunks and try to keep it all under the chicken. And I won't use green beans. I will likely try asparagus, especially if I can find some that are a little on the thicker side.

Idaho baking potatoes
Onion
Red pepper
Carrot (cross cut "chips")

Bigger pieces and tuck as much under the chicken as possible!
I had butternut squash pre-cut in fridge but forgot to add it, that's on my list for next time. Beets would be fantastic with this!!
