I made muffins the other day and put them in an airtight container. Meant to freeze the extras for lunches but didn't get around to it right away and now they are all soggy. I've learned my lesson.

(see this: https://www.wellplated.com/how-to-store-muffins-and-other-quick-breads/)

My question is... if I freeze them now will they just be disgusting? I hate to waste them. I have a pretty high tolerance for imperfection in food so at least they can be breakfasts for me, but they might get rejected in lunches.

I'm pretty sure I've done that before and they were fine.

Did you let them cool all the way before putting them in the container? If you do freeze them, you can always rewarm in the oven/toaster oven to make them less soggy.

I was thinking I'd try this! Thanks!

DS has muffins defrosted in the freezer every morning for breakfast, and has for at least 2 years. The key is to make sure they are 100% cooled before freezing them. I throw them in a ziplock and put them in the freezer. In my microwave, the magic formula is 2:20 on 30% for 2 muffins.
