I’m slammed with work, I’ve got a cold, and I can’t think of any food for 1:30 lunch on Saturday. 2 friends, then the 3 of us. Something simple I can make that morning and my friend wants me to tell her what to bring.help!!

I wouldn’t cook for friends since you are sick. Just bring something in.

What about soup in a crock pot? You could serve it with a nice crusty bread.

This is what I would do. Maybe a salad to go with it.

Soup and salad were my thoughts too. Otherwise, there is no shame going somewhere and buying a sandwich tray or anything pre-made (frozen lasagna, for example). We used to get together with another family for meals pretty often and it stressed me out coming up with ideas. I hit upon just ordering Thai one time and it was fabulous! It made hosting so much easier!

Grab some kind of takeout/premade soup or chili, throw it in the crockpot that morning. Have your friend bring bread and dessert.

Current kind of weather now always get me in the mood for soup, so have your friend bring crusty artisan bread and side salad.

I'm pretty sure you live in southern California- the weather is supposed to be hot this weekend. So maybe a hearty salad and no soup.

Make your own sandwiches. Buy good bread, tuna fish and cold cuts. Have a salad on the side.

Buy a quiche, or the costco mini quiches, buy a costco cesar salad and call it done. Have her bring cider or a drink.

If it's hot weather for you this weekend I would go with a pasta salad, green salad, and cold wraps or something similar. Then you could make or buy it ahead if you are able/interested (except for maybe the salad). If it's cooler I'd go for some chicken tortilla soup and bag of Caesar salad, both courtesy of Costco!
