I am coming up blank for dinner ideas for tomorrow. Needs to be simple, as DD has swimming. We've already had soup, DIY pizza, pasta and tacos this week.

We had Asian dumpling soup. From TJs: box of miso ginger broth, bag of baby bok Choi, and frozen potstickers (we used the shrimp ones but you can use veggie or pork or chicken),

Monday was lemon chicken over vegetables.

Yesterday was leftover meatballs and pasta from freezer.

Today was minestrone soup. I made each custom ie vegetables only, others included pasta and vegetables, etc.

Tomorrow probably turkey chili.

Tonight is take out because I'm not feeling great. But yesterday we had shrimp & veggie stir fry. Tomorrow will be mustard chicken and artichokes. 2 nights ago we had bacon bbq meatloaf with mashed potatoes, all from instant pot (this is a recent family favorite).

DH is away this week so it has mostly been leftovers but tonight I made this:
https://www.skinnytaste.com/one-skillet-chicken-with-bacon-and-green-beans/

It is a favorite for everyone. I usually cook the bacon in the microwave because I don’t want to clean up all the grease spatter and sautée the chicken in a little olive oil instead. I serve with roasted potatoes or rice or bread for the family (I try to skip the carbs). It’s a really quick under 30 minute meal.

This looks great! Subbing it in for Friday at our house!

Black bean soup over rice, topped with sour cream. It's the Moosewood recipe - easy and delicious. https://www.geniuskitchen.com/recipe/moosewood-black-bean-and-chipotle-soup-211822

I put pork tenderloin in slow cooker this am on top of sliced raw onion. A garlic powder/onion powder/salt and pepper rub, 1/2 cup bbq sauce and a cup of chicken broth. Cook on low for 8 hours. Served with bag salad. Kids ate with tortillas.

I try to make sure every meal has a protein, fruit/vegetable, and complex carb.

Some of my "simple and quick" main dishes are:
-rotisserie chicken
-breakfast (eggs, bacon, sausage)
-burgers (I keep frozen patties on hand)

Quick sides include:
-fruit
-raw carrots
-salad, esp pre-packed bagged salads
-frozen vegetables like peas, broccoli, edamame
-frozen French fries/tater tots
-baked (microwaved) potatoes
-rice
-toast

I'm following - just did veggie stir fry and then make your own tacos, which were good, but I feel like dinner is always a challenge, or at least thinking about it is. We tried Blue Apron this week. It was fair - besides the price, it took a huge amount of time to cook.
