Whatcha got planned? The cooking forum has been so quiet lately! Jump in and tell us what your meal plan is. This is one of those weeks that I haven't planned out and am kind of winging it/eating up leftovers/having spontaneous dinners.

Sunday: leftovers with sausages etc.
Monday: pizza with kale chips
Tuesday: TBD maybe black bean soup?
Wednesday: crockpot chicken with chicken from the freezer and broccoli
Thursday: maybe Mexican if soccer cancels for weather
Friday: mommy/daughter dinner out
Sat.: leftovers
Sun: Cinco de Mayo potluck and ?

Taco salad
Oven-Roasted Chicken Shawarma with tahini sauce
Pulled pork baked potatoes

Each of those should last 2 nights so that's 6 dinners total. I love leftovers!

We had fish tacos last night. Not sure about the rest of the week.

We had Costco lasagna last night
Tonight is take out after DS2's appointment

Also scheduled this week are:
instant pot meatloaf and mashed potatoes that everyone in my house loves
Corned beef and cabbage
Split pea soup with ham
Mustard maple salmon

Not a good week to ask me. Sports banquet tonight, 3 nights in a row of musical performances and a food festival on Sunday. :) But, here are things we've enjoyed lately:

this pizza dough can be ready in less than 2 hours and is great for make your own pizza night! We use parchment paper to assemble our pizzas on then slide the parchment paper right onto our pizza stone. Any toppings you have on hand work- we often clean out the fridge with veggies and leftover meat.

I’m not feeling it this week - no motivation to cook here!

Monday - we picked up from a local Greek restaurant.
Tuesday- breakfast for dinner
Wednesday - chicken avocado burritos
Thursday - tomato soup / grilled cheese sandwiches
Friday - baked ziti

This week is really hectic for us so I made couple of meals Sunday night to use later in week.

Sunday-we ate out at a new restaurant after exploring nearby parks.

Monday-marinated chicken drumsticks and asparagus from farmers market. First of season! Love them.

Tuesday-lasagna using recipe from Wegmans which I made Sunday.

Wednesday-most likely meatloaf and noodles with gravy

Thursday-ground turkey taco. I’m having mine as lettuce wraps.

Friday-probably pizza or takeout
Saturday-not sure; mum is in town visiting for DS1’s 1st holy communion Sunday.

I’m late to the thread, but here’s this week’s plan.

Sunday:
Harissa Chicken with puréed cauliflower (cauliflower mashed potatoes) and string beans. I don’t shred the chicken. I slice the breast crosswise and use lots of homemade sauce.

Monday:
Leftover gluten-free lasagna (I make mine with ground turkey, diced green pepper, mushrooms, and brown rice noodles.)

Tuesday:
Chicken Enchilada Roll-ups with salad

Wednesday:
Baseball uniform night and dinner. Kids will eat hamburgers/hotdogs/chips at the fundraiser. I will make tilapia with a tiny bit of mayonnaise, Mrs. Dash’s garlic and herb seasoning and a sprinkling of Parmesan plus broccoli to eat when I get home. The kids will eat the leftovers tomorrow as a pasta dish with buttered angel hair pasta and chopped broccoli.

Thursday:
Baseball
Angel hair and leftover fish for kids.
Chicken taco stuffed peppers for adults

Friday:

We ate stuff that was in the house this week - just got back from vacation and had freezer food to get through, which saved me from having to buy $100 worth of food just to eat.

And we let DD buy lunch all week.

So we did:

Pasta & meatballs (with broccoli)
Breakfast for dinner (DD & DH had cereal; I had an omelette with leftover cheese and broccoli)
Panera Flyer Fundraiser for DD's school
Trader Joe's Mandarin Orange chicken (with brown rice & broccoli)
Box mac & cheese

Have to plan the next 2 weeks, though.

We are in a total dinner rut, but this week was:

Monday: TJ's Mandarin orange chicken with rice and broccoli
Tuesday: taco Tuesday with pinto beans and yellow rice
Wednesday: spaghetti and meatballs
Thursday: no idea, I worked late, supposedly leftovers :)
Friday: pizza!

Here’s mine:

Monday: turkey sausage with onions, peppers, and mushrooms with rice

Tuesday: roast chicken with green beans and puréed cauliflower

Wednesday: turkey burgers and sweet potato fries

Thursday: leftovers

Friday: pizza

I’ve been in the mood for Indian, so I was thinking of making this for the weekend. It’d be a new recipe for me:
