Title says it all - we used to eat out pretty frequently and I’m getting very bored of our rotation.

What’s your favorite easy recipe? Points for those that involve less than 15 minutes of hands-on time...

I also tend to get into a rut after a while but these 2 have recently been my go to. One is taquitos with refried beans and tortillas. I don’t like using canned beans so I boil my beans in the instant pot, store bought tortillas. Another favorite is pasta e fagioli or pasta and beans, which can also be quick if you use canned beans. I cook vegan so I don’t have ideas for recipes with meat and or dairy.

Super duper easy:

From Joanna Gaines' cookbook (we had his for dinner tonight, & DH said how nice it is to have such an easy meal that's a hit with everyone):
Ham & Swiss Stuffed Chicken Roulades:
4 chicken breasts, 1/2 t garlic powder, 2 T chiffonade-cut fresh sage leaves, 1/2 t kosher salt, 1/2 t freshly cracked pepper; 4 slices of ham; 4 slices of Swiss cheese; 4 T (1/2 stick) unsalted butter, melted

Preheat oven to 375. Pound chicken breasts to 1/4" thickness. Sprinkle chicken with spices, then cover each breast w/a slice of ham & a slice of cheese. Roll up each breast & stick toothpick in. Put in 9x9 dish; pour melted butter over, and put the rest of seasonings on (remaining 1/4 t salt and pepper). Cover w/foil & bake for 25 min. Remove foil and bake 18-20 min (I did about 25 min more) til browning and cooked through. Can serve with juices drizzled on top; whole or sliced to show the filling.

Another nice light summer one is lemon pepper chicken. Basically similar preparation, but with a high quality lemon pepper, plus some lemon slices on top for garnish.

Another is bbq chicken tenders with a slice of bacon wrapped around and baked.

Can you tell we eat a lot of chicken in our house? ;)

Hot turkey wraps
Warm some deli turkey with some shredded or sliced Monterey Jack cheese on a skillet. Put on a tortilla with some coleslaw (shredded cabbage with a little mayo, sprinkle of sugar, and dab of hot sauce)

Bacon cheddar wraps
Slices of chicken or rotisserie chicken on a tortilla or wrap. Add bacon, cheese (cheddar), and apples thinly sliced that were warmed in the microwave for 30 seconds with a splash of water and cinnamon.

Meatballs and butter noodles (my kids like that better than spaghetti

Sloppy joes

Pasta with fresh raw tomatoes
Marinate 2 chopped tomatoes with 1/3 cup olive oil, 1/4 cup chopped basil, 2 whole but crushed garlic cloves (you’ll remove them before eating), pinch of hot pepper flakes) for 2-3 hrs (Or more)

When ready to eat boil a pound of pasta, tubes, bow ties, etc to al dente. When the pasta is done drain and take out garlic from marinade and add oil marinade to hot noddles. Add 1/4lb Muenster cheese that’s been cubed.

Super easy and everyone liked. I usually do my own stir fry type dishes, but it was nice to just open up the package and dump everything together. I have even done it with frozen sliced peppers and onions (had a giant bag I bought at beginning of lock down)

This is super easy, fast and delicious:

Sheet Pan Chicken Fajitas:

Ingredients:
1 tablespoon Chili Powder
Kosher Salt and Pepper
Original Recipe calls for 1lb of Baby Bell Peppers however I have used an assortment of regular peppers
1 large Yellow Onion, halved and thinly sliced
2 Tablespoons Olive Oil
1 1/2 lbs Boneless Chicken Breast
Juice of 1 lime
8 Flour Tortillas Warmed
Shredded Monterey Jack cheese, guacamole, hot sauce, salsa and sour cream, for serving

Directions:
Preheat the Broiler to high. Line a rimmed baking sheet with foil
Combine the chili powder, 2 teaspoons salt and 1 teaspoon pepper in a small bowl. Put the peppers and onions on the prepared baking sheet, drizzle with 1 tablespoon of the oil and season with half the chili powder mixture. Broil until softened and starting to char, about 10 minutes.
Meanwhile, cut the chicken into 1/4-inch-thick slices and toss in a large bowl with the remaining chile powder mixture and 1 tablespoon oil.
After the peppers are softened and starting to char, about 10 minutes, scatter the chicken on top of the peppers and onions and return the baking sheet to the broiler until the chicken is cooked through and starting to brown, about 5 minutes more. Drizzle with the lime juice.
Serve with the warmed tortillas, Monterey Jack cheese, guacamole, hot sauce, salsa, sour cream and lime wedges.

And have you seen the King Arthur Flour Crispy-Cheesy Pan Pizza recipe? (You don't even have to make your own dough! If using store-bought dough, start at the overnight rise step. Also, because cast iron holds heat really well & can be used anywhere, we have successfully baked this on the grill, so we didn't have to heat up the house.)

I have a lot of throw together what you have in the refrigerator recipes I like. Examples:

Indian: Jar Indian sauce (there are numerous ones, many mild) + any of the following: chapped kale, frozen spinach, canned chick peas, cauliflower, frozen peas, chicken, tofu. I usually pick two ingredients. Throw rice in a rice cooker or rinse the rice, put some ghee in the rice cooker get it hot, add a cinnamon stick, peppercorns, cumin seed, turmeric and sauté a minute, and rice to coat then add the water & cook regularly. Fancy rice. I also use an instant pot Indian cookbook to make up big batches of sauces and freeze them instead of jarred ones. More advanced.

Clean on the Fridge Pasta:
Box of pasta for casserole cooked. Chopped onion + garlic sautés. Then add things like Chopped kale, Swiss chard, sliced zucchini, peppers, same idea. Don’t throw out stems of kale/chard. Chop and sauté them with onions. You can throw sausage on it if you want. Or chop up a few slices of bacon. Throw the pasta and all the veggies together. Stir in 1/4 to 1/2 cup of ricotta cheese until it distributes. The put in a cup or do of shredded mozzarella cheese. Last nights past was:onion, garlic, basil, Swiss chard, one lone zucchini, some peas I had, pepper, left over pulled pork and 1/2 jar of sauce. Everyone loved it.

I’m streamlining the recipe. I do the cauliflower and toast the hoagies in the oven , then I put the roasted cauliflower and cheese on the hoagies and pop them back in to melt. I didn’t do Gouda, just cheddar and didn’t look for anything special. Everyone lives my version.

You might also want to check out the Epicurious App for recipes and videos and ideas. Each January they do the “Cook 90” challenge where you cook all your meals for a month. To be clear, I’ve never done that. But I find that they have weekly meal plans that rely heavily on getting 2-3 meals out of one big dish with planned leftovers. Very helpful.

I usually am a make it from scratch person, but for this I just buy the bag of already breaded chicken patties and throw on the ham and cheese. My kids really like the sauce and have begun to eat it with regular chicken nuggets too.

Korean ground beef and rice! SUPER easy and fast, especially if you have frozen TJ's jasmine rice. :) Serve with broccoli. The whole fam loves it!
