View Full Version : Easy vegetarian soup for Xmas

I'm setting out a Christmas buffet this year. There are a few vegetarians/pescetarians in the group. I am so far having a ham, sandwich rolls, mac and cheese, shrimp tray, scallops and bacon, and assorted cheese/fruit plate. I'm looking for a soup recipe that can go with the above that will round out the vegetarian meal. Something simple but a bit special and different? I can set it out in a crock pot, but prefer to cook it on the stove as I may be using the Instant pot for the mac and cheese. Or something I can do the day before.

Cream of Asparagus and Mushroom soup would be good -- and the green color would look nice with the other foods. There are lots of recipes. You can sub vegetable stock for chicken broth. I made this version recently.... instead of sautéing in in bacon renderings, use butter.

The first soup is more comfort food. The potatoes give it a thickness that feels hearty. The second is brighter and tastes lighter. The yogurt and lemon add a nice tang and the parmesan cheese sprinkles add a deep flavor.


Also, butternut squash soup is a nice hearty fall soup. There are lots of options depending on the flavor you are seeking. I sometimes make this one:

A local restaurant used to serve this soup, but they closed several years ago. The soup seems to have a cult following, so the recipe lives on :-)

It does take some prep (lots of ingredients), but then it all simmers together for 50 minutes. It calls for bacon drippings and beef stock, but you can totally use veg/mushroom stock and butter.

I double this recipe, add extra garlic and zest from the lemons, if I’m not too lazy. Sometimes I use parsley instead of cilantro, because my kids don’t care for it. We also add a can of crushed or diced tomatoes. :-)

Yes!

These two are favorites at our house. They freeze fabulously too! I serve with bread, cheese and a fruit plate. The second is very forgiving. I use spinach as I have it in the house often.
