This tuscan minestrone soup can be done chunky. You can add more veggies and it turns out fine.

I was going to say minestrone soup too! I just made it 2 days ago. Here's the recipe I've used for years. I use all chicken broth no water, 2 cans of beans, and frozen green beans not canned.

It looks like you're already set with yummy recipes, but just wanted to add an old Weight Watchers favorite from 30ish years ago. It goes by a bunch of names like Free Soup, Cabbage Soup, and Program Soup. No matter what it is called, it is very good and customizable.
