    When I was a server I knew a fellow who would turn 3's into 8's and play similar tricks to up his tips. It's very likely that she's doing just that. If the manager can't find any evidence that she's done it before, well then it's an accident. Otherwise it will be obvious what he needs to do.

    Even if you put cash on the table and write XXXX in the tip line, couldn't they still add a fraudulent tip to your bill?

    Easier to make 3.00 in to 13.00 or a 4 into a 9 than fill in numbers for XXs.

    People in NYC have been arrested, convicted and jailed for this crime - in those cases it was in the thousands of dollars over many months, but it was the same crime - adding tips to unwitting credit card users. Your brother should definitely contact the authorities, the credit card company, and the restaurant. Good luck!
