    Default OT. Using a cake mix for a christmas yule log cake?

    These are popular in England, but most people usually cheat and buy the rolled cake (we call them Swiss rolls) and frost it into the shape of a log. I came across a recipe at epicurious but it may be beyond me for time and energy, especially given that my mixer is broken. Has anybody used a Betty Croker like pre-packaged cake mix that would be suitable for filling and rolling? TIA

    Maybe you can check The Cake Mix Doctor book out of the local library (or maybe another mom on the boards has it). The description states there is a recipe for the Yule Log cake...

    Hi

    I've always used the recipe from Delia Smith, the cake part is pretty simple but the books at home, the chocalate mousse filling part was the pain but I'm sure you could substitute for that. I've never used cake mixes but I think you'd want one thats sort of a bit elastic and not crumbly.

    Good point on the elastic cake texture. We always filled ours with raspberry jam and whipped cream....yum yum!

    Some cake mixes come with instructions when baking "jelly rolls" - that's what they're called here, apologies if you already knew that. SO I would check the box.
