I know I read about that too, however, isnt it ok if you buy the "organic" vegetables that the nitrates apply to. I thought I also read that the organic companies are aware of the nitrate problem and have a better angle on it. Anyone read something like that? ~Beth
be aware that the Super Baby Food book has not been updated with the latest information about allergies. It suggest giving some foods far earlier than current wisdom dictates.

The high concentrations of nitrate in some farm areas generally comes from inorganic fertilizers. So homemade baby foods from certified organic vegetables should have much lower nitrate concentrations. Also, if you carefully wash the vegetables after chopping them, this should further reduce nitrate, since it's water soluble. It is my understanding that the majority of the very few cases of methemoglobinemia each year occur from formula made with water from contaminated wells, not so much from vegetables.
Methemoglobinemia, aka blue baby syndrome, is where the nitrate is converted to nitrite in the stomach, then the nitrite interferes with the production of hemoglobin. Kids under 4-6 months are more susceptible, hence the "baby" part. http://ianrpubs.unl.edu/water/g1369.htm

I like "The Healthy Baby Meal Planner" by Annabel Karmel. Simple information, fun recipes, etc. I tend to introduce foods approximately 2 mo after when she recommends, though- sometimes longer. Just compare what the book says with recommendations you hear elsewhere (like from your pediatrician, etc) and then make your decisions based on that.
I read the warning about nitrates, too. I buy organic, though, and just try to limit how much of those foods ds gets in a week if they are homemade. I also haven't worried TOO much about it because in all my reading and research, it is the ONLY place I have seen it mentioned.

www.wholesomebabyfood.com actually has a very comprehensive chart. I believe they don't list corn (which should be delayed until after about 10 months or so) and may be missing one other item that I can't remember now :) I researched this at the time and went over it with my pediatrician and it was accurate and complete.

I received "First Meals" by Annabel Karmel as a shower gift and it is wonderful- tips on cooking, nutrition and recipes for infants to older kid ages. Lots of pictures as well.
