This is from Betty Crocker:
Double Chocolate Snack Cake
1 2/3 cup all-purpose flour
1 cup packed brown sugar or white sugar
1/4 cup cocoa
1 tsp. baking soda
1/2 tsp. salt
1 cup water
1/3 cup vegetable oil
1 tsp. vinegar
1/2 tsp. vanilla
1/2 cup semisweet chocolate chips (optional)
Heat oven to 350 degrees. Mix flour, sugar, cocoa, bking soda and salt with fork in ungreased square baking pan, 8x8x2 inches. Stir in remaining ingredients except chocolate chips. Sprinkle chocolate chips over batter.
Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool on wire rack. Sprinkle with powdered sugar if desired.
Variations:
Oatmeal-Molasses
Omit cocoa, vanilla and chocolate chips. Stir 3/4 cup quick-cooking oats, 1/2 cup raisins and 1 tsp. ground allspice into flour mixture. Stir in 2 tbsp. dark molasses with the remaining ingredients.
Pumpkin
Omit cocoa, vanilla and chocolate chips. Stir in 1 tsp. ground allspice [I usually use a combo of allspice, cinnamon and nutmeg.] into flour mixture. Decrease water to 1/2 cup. Stir in 1/2 cup canned plain pumpkin with the remaining ingredients.
Joy of Cooking also has two vegan cake recipes (a chocolate and an orange - the orange is super sweet though) but i like the above because you mix all in the ingredients in the baking pan. fewer dishes is a beautiful thing. . .
