    Default What do I do with rhubarb?

    This week's selection of produce from my CSA included 2 stalks of rhubarb! What on earth do I do with it? Pie? If so, how do I prepare it? Any other scintillating rhubarb recipes?

    Yeah on being a CSA member :) Two stalks of rhubarb is hardly enough to do much with. My two quick ideas. Buy a quart of strawberries, hull and slice into a sauce pan. Chop rhubarb into small pieces. Simmer with a touch of water for 15-30 minutes depending on how chunky you like your sauce. Add sugar or honey to taste. Another option is do use it in muffins instead of blueberries. I would chop it into small pieces, roll in sugar and then stir into a plain muffin batter.

    I do have real recipes but I don't think you'd have enough to do much with it.

    Rhubarb Crisp

    3 cups rhubarb, cut in 1-inch pieces
    3/4 cup sugar
    1 egg, well beaten
    1/4 cup butter (1/2 stick)
    1/3 cup brown sugar, firmly packed
    2/3 cup all-purpose flour

    Mix together the rhubarb, sugar, and egg. Place in 9 inch square casserole dish. Combine the butter, brown sugar and flour. Sprinkle over the rhubarb mixture. Bake in a 350 degree oven for 30 minutes.

    You probably don't have enough rhubarb for this recipe, but you could use what you have and then add another fruit to make 3c. I have made this with strawberries (they turn white after baking), apples and peaches. Or, you could just adjust the recipe to the amount of rhubarb you have and make individual servings!

    Hi,
    No recipe help but I was wondering how you found a CSA. I have been searching for one in my area but I haven't found one. It maybe that there isn't one but I just want to double check that I'm not missing something.
    We are in Boston, BTW.

    My CSA advertised in the local paper. I know of at least three others in my area (smallish city, lots of agriculture in the area), but to my knowledge none of them advertise. I just happen to know about them through word of mouth and personal connections. There's a website called localharvest.org that has listings for CSA's. Also, look for flyers at your local natural foods store, and ask at your local farmers market.

    You can chop it up and freeze it. My parents get a ton of rhubarb every spring which they readily share. I usually chop it up and bag it by the cup then put it in the freezer. I mostly make breads and muffins.

    Ah, wonderful! We've got a chest freezer in the basement, so I'll chuck it in there tonight and defer all rhubarb decision making for another day. :)

    I was about to suggest the strawberry-rhubarb sauce as well. I use it on pancakes, waffles, over icecream, etc.
