    Default What's for dinner?

    Babycenter's cooking board does a thread like this and I love it although I don't like their board layout. I thought maybe we could do something like they do there. I love to cook so I'm always looking for something new to try.


    Tonight we are having a cornbread deep dish pizza that I found in the Family Fun magazine a few months ago. We love this recipe and its easy to make. I'll also serve a salad with dinner.

    that sounds yummy :)

    we are having marinated margarita lime chicken with im thinking scalloped potatoes and green beans. my boys love green beans so that is the veggie at most of our dinners.

    We are having Corn Chowder, home-made crusty bread and a salad. I am opening the wine right now. :)

    That sounds fantastic! Could you post the recipe for that. We make our own pizza 99% of the time and we are always looking for different ways to make it.

    I hope that we can keep this thread going!

    Oh, we had penne pasta with sauce. BORING! LOL!

    Default Deep dish cornbread pizza

    INGREDIENTS:
    Crust:
    1 (8 1/2-ounce) box Jiffy brand corn-muffin mix
    1 large egg
    1/2 cup milk
    1/2 cup grated Parmesan

    Topping:


    1 tablespoon vegetable oil
    1 large onion, chopped
    1 garlic clove, chopped
    1 (26-ounce) jar of your favorite pasta sauce
    1/2 teaspoon dried oregano
    Salt and pepper to taste
    1 pound sausage of your choice, cooked and crumbled or sliced
    1/2 pound Monterey Jack, shredded
    1. Heat the oven to 375 degrees. Grease a 9- by 13-inch baking dish. Prepare the muffin mix using the egg and 1/2 cup of milk. (Note: this amount of milk is different from what's called for in the package directions.) Add the Parmesan, then spread the batter evenly across the bottom of the pan.

    2. Heat the oil in a large skillet, then sauté the onion and garlic until translucent, about 2 minutes. Add the pasta sauce, oregano, and salt and pepper. Cook the sauce until it thickens, about 5 minutes, stirring frequently.

    3. Arrange half of the cooked, room-temperature sausage on the cornmeal batter. Pour the sauce over the batter, spreading it evenly, then layer on the remaining sausage. Bake for 15 minutes, then top the mixture with Monterey Jack and bake until the cheese is bubbling, about 10 minutes. Cut into slices and serve. Makes 6 servings.

    I would love the recipe for homemade crusty bread. I make our bread all the time but have yet to find a recipe I like for crusty bread.

    Chicken and broccoli over noodles with an Asian twist

    Chicken breast marinated in minced garlic, soy sauce, rice wine, sesame oil. Chicken is stir fried with minced ginger and green onions, tossed with broccoli, and mixed with a sauce made from chicken broth, oyster sauce, a little more soy sauce and rice wine. All served over a bed of chow mein noodles.

    It's a fancy night at our house. We normally do bland pasta or frozen pizza.

    Edited to add recipe:

    -1.5 pounds boneless skinless chicken breast

    Marinate for at least 30 minutes in:
    -2 tablespoons soy sauce
    -1.5 tablespoons rice wine/sake/dry sherry
    -1.5 tablespoons minced garlic
    -1 teaspoon sesame oil
    -1 tablespoon cornstarch

    Cook a large bunch of broccoli and set aside.

    Stir fry chicken until it is no longer pink.

    While chicken cooks, mix together sauce:
    -1/2 cup chicken broth
    -5 tablespoons oyster sauce
    -1 tablespoon rice wine/sake/dry sherry
    -1.5 teaspoons sugar
    -1 teaspoon soy sauce
    -1 teaspoon sesame oil
    -1.5 teaspoons cornstarch

    When chicken is almost done, add the following to the pan and stir fry for 30 seconds or until fragrant:
    -1.5 tablespoons minced fresh ginger
    -2 tablespoons minced scallions

    Now add sauce mixture to pan, stir constantly till thickened. Shouldn't take more than a minute or two. Add broccoli and mix until heated through. Serve over rice or noodles.
