Now I plan to use 2 meals from my freezer stash (love freezer cooking), make 1-2 meals that can add to the freezer, a couple really simple/cheap meals (pancakes etc). I work 3-11 part time, and leave meals for DH and the kids on those days (using the crock pot or frozen casseroles I leave in the oven on time bake) so I write my schedule out as I plan meals. I currently plan a week at a time but am hoping to plan 2 weeks at a time soon. I hate grocery shopping and it would be great to do most of it every couple weeks and just stop by on my way home from work to pick up some produce.
Here is last weeks. I'm actually winging this week a little-haven't been to the store yet!
mon (3-11) swiss chx-crockpot
tues nanny night (DH's grandma has everyone to supper)
wed (off) potato soup and bread
thurs (off) chicken tetrazini (freezer recipie-made 2 and froze 1)
fri (3-11) DH goes out with his parents-if I'm off I cook for everyone

Dinner leftovers
Sun Lunch- lasagne (frozen-I made 6 the last time I made them!)
Dinner- shepherd's pie
DS and I eat dinner leftovers for lunch the next day. I freeze sandwiches and leftover soup for dinner on the days I work.

I did menu mailer for about a year and it was a great way to learn how to plan. But DH is a plain meat and potatoes type guy so we only ate about 1/2 the meals. But I did get a lot of great recipes-I still use and love the turkey burgers and home made chx tenders.

Here's our menu for the week.
Monday - Parmesan chicken, salad & noodles
Tuesday - Thai peanut pork (crockpot) with steamed veggies & rice
Wednesday - Chicken dijon, pasta as a side and green beans
Thursday - spaghetti & meatballs, salad & bread
Friday - homemade pizza & salad
Saturday - ?
Usually on Sunday after I clip the coupons I sit down with the coupons and the grocery sale flyer and write up a list of what to eat based on what is on sale. I also do a LOT Of freezer cooking so I usually have a lot in my stash to pick from. I used to go to the meal prep places but now a friend and I get together once every month or so and put together freezer meals together. I find it's much cheaper that way.
Can someone share their Parmesan Chicken recipe? DH and I love to get this at Olive Garden but mine has never turned out very well.

Put frozen breaded chicken tenders (ck fingers) in dish.
Cover with shredded or sliced mozzarella cheese.
Spoon pasta sauce on top of the mozzarella

The quick version is what I've tried before. The frozen chicken just never tastes right. I'll attempt the recipe! I've never been very good at breading meat.

I don't really plan it out to a tee, but one thing we do is cook a lot on weekends and then freeze or eat as leftovers. Many times on Sunday we'll cook two chickens side by side in a huge cast iron roasting pan. That gives us dinner for that night, plus plenty of leftovers. I often debone and cube the meat. That gets reinvented for planned leftovers...chicken salad, fajitas, soft tacos, over salad greens, etc. Sometimes I also throw something in the crockpot (like a roasat) and have that going all day as well on Sunday (in addition to cooking two chickens).
This system tends to work pretty well for us. It isn't formal meal planning, but it works for us.
My mom gets Woman's Day magazine and they usually (or at least they used to...) have a monthly meal plan in them.
