A friend shared this recipe with me, and it was so easy and delicious. The Wasabi Mayonnaise from Trader Joe's really makes a difference.

California Roll Casserole

Mix cooked and cooled Calrose rice (short grain Japanese rice) with Seasoned Rice Vinegar (can be found at Asian Markets and probably in the Asian foods aisle at any grocery store) to taste. For 3 cups of uncooked rice, it's about 4 tablespoons of Seasoned Rice Vinegar (TJs also has this). Or just season to taste. Press seasoned rice into a casserole dish. Spread a thin layer of Trader Joe's Wasabi Mayo over the rice. Place chopped up fresh avocado (1 large avocado) and chopped up imitation or real crab meat on top. Press the avocado and the crab meat into the casserole. Then sprinkle generously with Furikake (seasoned seaweed sprinkles).

It's yummy and easy! It doesn't taste good after being in the fridge b/c the rice gets hard. It is best served immediately.
