My SIL made this last weekend ~ it was really yummy!!!
Mexican Caviar Dip
1/2 Cup Olive Oil
1/4 Cup Red Wine Vinegar
1/2 tsp Salt
1/8 tsp Tabasco
2 16oz. cans of Black Beans (drained and rinsed)
2 11oz. cans Green Giant Mexicorn
1/2 Cup Chopped Scallions
2 Ripe Avocados cut small
2 Ripe Tomatoes cut small
Mix it all together and serve with chips
