    Default Yummy recipe thought I'd share

    I just wrote this out for a friend and thought I'd share here. I make this a couple of times a month and it rocks. Kids LOVE it.

    Ingredients:
    1 tbsp Olive oil
    1 Onion (cut up)
    2-4 cloves of garlic (depends on what you like, for the kids I use 2) cut up
    1 lb ground beef (or chicken/turkey/buffalo – I use one of these, never beef but you could use beef)
    1 can of black beans, drained and rinsed
    1 can of black olives, cut up or mashed up
    1 jar of salsa (I use mild as I don’t like spicy but you could go stronger)
    2 tortillas (I use whole wheat)
    ¾ lbs or so of shredded cheddar cheese (I shred my own, I find the store shredded tastes like plastic)

    Directions
    In a large pan, put oil in and heat to high temp – until oil is hot
    Add onion and cook until tender (but not brown) – 2 mins or so
    Add garlic and cook for 15 seconds
    Add ground meat and cook until completely cooked (no longer pink/red); mash up the meat so it separates
    Add black beans and olives and mix (1 min)
    Add salsa and mix (30 seconds)
    Remove from heat

    In a dish (I use a larger pie pan) put a tortilla on the bottom; place ½ the meat mixture on top; place ½ of shredded cheese; and then do another layer (tortilla; meat; cheese).

    Put in over at 350 degrees (put a cookie sheet under it, cheese can bubble and melt over the top). Cook until JUST brown (15 mins or so). You can either serve immediately OR (I prefer) to let cool and put in fridge. For some reason it tastes better the second day. You can reheat in the oven or microwave.

    Thanks. This would be a great idea for make ahead and freeze (the meat filling part)

    Sounds delicious to me. I would have to strip it down and remove the olives and black beans. I wish my kids were as adventurous as yours. Olives! In my dreams, LOL!

    This was so good, thank you for sharing.
    Every person at our table truly enjoyed this dish. To please an 11 month old, a two year old, a five year old and their parents with one dish is just amazing. Thanks
