    Default help! shortbread!

    I made the dough for shortbread, and put it in the refrigereator last night. I just took it out expecting to start rolling i - but it rock hard! is this expected? should I let it sit on the counter for a bit? Help, please!!!

    Hmm, I've never refrigerated shortbread dough. It's mosly butter so I'd think it would come out of the refrigerator like stick butter in texture? (I'm lazy and I've always just patted my shortbread dough out rather than try to roll it. The end result isn't as pretty but it still tastes good.)

    I made a shortbread recipe the other day and the same thing happened to me. I let it sit out for awhile and it softened right up, and the cookies turned out great.
