Anyone care to share your favorite chicken salad recipe? I've got extra rotisserie chicken and thought chicken salad sounded like a good way to use it. I've never made one I was real excited about, so I thought y'all might have a good one.

I keep meaning to try different chicken salad recipes! I don't have a favorite, but my plan was to use some of the recipes from Whole Foods b/c I know I like a few varieties of their chicken salad. I know that I like Sonoma Chicken Salad and Tarragon Chicken Salad.

We make it with mayo, salt & pepper to taste, raisins and chunks of apple. Almonds are delicious in it too...sometimes I add a squirt of mustard or a tiny dash of vinegar.
No real recipe here either, but I usually use a rotisserie chicken cut up, mayo, salt, pepper, paprika, a chopped up apple, celery, finely diced onions and halved grapes. It always gets good reviews.
Mayo, salt/pepper, a little mustard, some lemon juice, maybe some garlic powder. If I have apples/celery/whatever, sometimes I might toss those in, too. I usually just totally wing it and glop stuff in the bowl and mix until it tastes good.

I have had some interesting and delicious chicken salads out, but at home, I'm a traditionalist. I make my mom's chicken salad, which is super easy....chopped onion and celery, mayo, salt and pepper, a dash of sweet relish to give it a little extra flavor, and usually that's it. Sometimes, since DH likes it, I will put a sliced hard boiled egg in, but I'm not a fan.
