before i read your whole post, i was going to say rice krispy treats! it's kind of like using stale bread for french toast.
If they are stale, the treats won't turn out right. I'd say sample them before committing to the whole project.

If they are sealed but expired, I bet they are still fresh. I'm sure I've eaten opened cereal that has expired without "ill" effects.
No bugs and not stale, why wouldn't you keep them? They don't go bad, that' just a best by date not use or die date.

I've used cereal WAAAAY older than that (blushing from embarrassment). The treats will come out just fine. Expired marshmallows, on the other hand, is another story...
