    Default Yummy fish/chicken breading

    Was experimenting the other night and came up with a great combination for breading. I used it on plain white fish but it would be great on chicken, too.

    Take frozen tilapia and put the filets on a baking sheet. Rub each side with olive oil then mix the bread crumbs (mix about 1/2 a bag of TJ's organic plain bread crumbs with with one packet of Hidden Valley Ranch dip). Sprinkle the bread crumb mix over the fish, turn and do the same for the other side. Bake according to the directions on the fish bag, no need turn.

    Nice crunchy coating with a great flavor. Everyone gobbled it up!
    Of course you can use fresh fish or fresh chicken. Just wanted to show that this is good even on frozen fish in a pinch!

    cool! May have to try that. My kids devour the whole-grain crusted tilapia at Costco, but I'd love to bread my own, esp. if it is tastier and cheaper.
