    I just bought the cranberries and persimmons today!

    We are doing a variation on pretty much what we do every year. homemade goodness.

    Roast turkey
    Rustic bread and sausage stuffing
    Homemade cranberry orange relish
    Mashed potatoes, carrots and sunchokes with roasted garlic
    Brussel sprouts quartered with a little chicken sausage.
    Glazed roasted parsnips, turnips and carrots
    Green beans
    Pomegranate salad
    Stuffed mushrooms

    My dad will make chocolate, butterscotch and lemon pies. We have decided to make a pumpkin pie for the boys (pre roasted and froze the pumpkin last week) and a persimmon pie.

    We host another family and often just some random people. We like leftovers.

Fold in 12 ounce bag of chocolate chunks and pour into the greased casserole. Bake for a 1/2 hour, remove from heat for a second to sprinkle additional 2 tablespoons of sugar over it. Continue baking for an additional 20-25 minutes or until puffed and golden. Serve warm in a puddle of heavy whipping cream. Enjoy!

    My dad made most of the food I ate as a child. My mother was perhaps the world's worst cook. Or close.

    The filling for lemon pies is:

    Over low heat, Mix 1.25 cups of sugar with 1/2 cup of cornstarch and 2.5 cups of water. Whisk continuously for about 5 to 6 minutes. The mixture will be thick and smooth.

    Mix a little bit of the above with 8 egg YOLKS and then mix it all. Whisk all the time. Remove pan from heat and then add:

    Pinch of salt
    Half cup lemon juice
    1.5 teaspoons of lemon zest
    3 tablespoons of butter

    Whisk until smooth. Lay out all ingredients and never stop stiring, ever.

    Pour into pre baked pie crust.

    Make meringue in a mixer or use a hand mixer.

    Mix 3 to 4 egg whites
    1/4 teaspoon cream of tartar in a clean and dry bowl. No yolk can be in the whites at all or it will not work.

    When a little thicken, add a bit more than half a cup of sugar like 5/8 of a cup, pour in slowly as you beat the eggs. 4 to 5 minutes for stiff peaks. If it does not stiffen there was yolk or an oil of some kind in your bowl.

    Put meringue onto filled pie shell and bake for 5 minutes at 350' then turn to broil and brown some of the meringue for a couple of minutes tops.

    This is for a lemon pie. For custard pie, replace some of the water with whole milk. For super sweet cream pie replace part of the water with sweetened condensed milk. For vivid yellow pie, add a little yellow Wilton coloring to the pie filling,

    I'm going to try PW's turkey brine this year. I've never brined a turkey before and I think I am missing out on something.
