I am making Rachel Ray's Taco Bowls as requested by DS1 (basically Tacos but using tortilla chips instead) and some TJ's taquitos on the side.

We're doing quesedillas. Tortilla, fill with whatever you like, throw on the George Foreman grill or a griddle. Serve with sour cream, guac, salsa. DONE!
We usually use some combination of leftover grilled or roasted chicken, black beans, cheese, rice (or on the side), corn, salsa, grilled pepper/onions.
