    I use an Emeril recipe. I like bananas but usually hate banana bread (as well as most desserts with bananas). Now I make this and love it as do both DC, only one of whom will eat an actual banana.

    1/2 cup vegatable shortening
    1 cup sugar
    2 eggs
    @ 1 cup mashed ripe bananas (you can use more if you like)
    1 1/4 cup flour
    1 tsp baking soda
    1/2 tsp salt
    pinch of cinnamon

    you can add nuts if you like, I never have, but I always add chocolate chips

    oil and flour loaf pan
    pre heat oven to 350

    Using an electic mixer, cream the shortening and sugar together.
    With mixer running add the eggs 1 at a time.
    Add the bananas and mix well.
    Add the baking soda, salt, flour and cinammon together, then add to mixture and mix thorougly.
    The dough will be sticky.
    Pour into the loaf oan and bake for @ 1 hour. Check at abou 50 minutes or so to make sure it is not too dry.

    In my oven, it is usually done before 1 hour.

    I remember this banana bread being pretty light on the banana flavor, due to the extra cream cheese. You can leave out the brown sugar/pecan layer.
