Has anyone frozen portions of the baked oatmeal or successfully halved the recipe?
It makes such a big pan and I know I'll eat ALL of it by myself. Anyone successfully made it smaller or frozen it?

I freeze it all the time. I make the big 9x13 pan and since it's usually just me eating it, freeze half of it.
I make half the recipe.
Thanks. I'll make a batch this weekend and then freeze it for breakfasts.
i also cut it into serving size pieces and freeze without any issues!

Oatmeal is the most freezer friendly breakfast. I actually sometimes buy the steel-cut oats frozen oatmeal from Trader Joe's, which is ridiculous because it's nothing but frozen oatmeal sealed in plastic then boxed.
eta but it is so easy and yummy and (relatively) healthy!

Freezing baked oatmeal is a great idea! I love it, but don't have it often because it takes longer to make in the morning than I like. I'm definitely going to try this!
