    Default Banana bread that's not too banana-y?

    I hate bananas. Yes, I'm a freak. But I buy them b/c others in my house eat them, until they are deemed "too brown" and won't touch them! I suppose I should be using these for banana bread.

    Anyone have a recipe that isn't too overwhelmingly banana-y? Because I love baked goods and will WANT to eat it but it will taste yucky.

    Do your kids like banana muffins? You could make those and put them in their lunches. They freeze well.

    Also, you can substitute other mashed fruits/veggies of similar consistency (like pumpkin) for some of the banana in a recipe.

    The more ripe (over ripe) the banana, the stronger the flavor.

    I add chocolate chips to my banana bread.

    I replace 1/2 the mashed bananas in my recipe with unsweetened applesauce. It works great. I use the old Better Homes and Gardens recipe
    (Red check pattern cookbook).

    I also make mine with 50% WW flour instead of all white.

    I like bananas (fresh, and not too ripe), but I hate all things banana flavored. This is perfect for me.

    So do I. (My recipe calls for walnuts. I don't like walnuts. I've also used toasted chopped pecans and currants, but that version didn't go over as well as the chocolate chip one.)

    I hate bananas too. Banana bread is the only way I can handle them, and it has to be my mom's recipe. nak now but I'll post the recipe in a bit.

    OK, I only had one brown banana, so I went looking for a recipe that would take one. Came across this (had actually been posted here too in an old thread!) and it's in the oven now. I'm hoping with just one banana it will be OK.

    I added 1/4c mini choc chips and 1/2tsp cinnamon, and about a tbls flax. We'll see how it comes out!

    Will your kids eat banana pancakes? I make them with overripe bananas (I use the "Banana Pancakes 1" recipe on allrecipes, freeze them in individual baggies, and heat them in the microwave for the kids in the mornings.

    Just an idea in case you don't love the banana bread.

    A really easy one that isn't too "banana-y" for you:

    1 yellow cake mix
    2 eggs
    3-4 mashed bananas
    1/2c - 1c of choc chips

    It's easy and pretty good. Oh, and found it on pinterest!
