I just ran across this South Beach phase 1 dessert recipe - I guess it could be described as a very thick cream? Almost like a pudding, but THICK. Very easy, and unbelievably GOOD! I am a mega chocoholic, and can't live without peanut butter, so this was ideal.

-2 Tbsp low fat or fat free cream cheese (I used 2 wedges of Laughing Cow light)
-1 Tbsp peanut butter
-1 tsp vanilla extract
-1/2 to 1 Tbsp cocoa powder (I used 1 Tbsp and it was *incredibly* rich)
-sugar substitute, to taste (I used about 1 tsp of Splenda)
-Fat free half&half - (amount to desired consistency - I used about 1 Tbsp?)
Mix, chill, serve.
