I cooked a whole chicken in the crockpot the other day, and have about 1/2 the meat frozen, I chopped it up into small chunks before freezing.
I'll put some on my salads for lunch, but I also want to use it for dinner. I normally use it for burritos, but I want some other options.
What can I do with it?

make a gravy, add some onion, carrots, peas, put in a crust - voila! chicken pot pie!
chicken rice or noodle soup, especially if you still have the carcass.
add some barbecue sauce & serve over rice.
