I make this Mexican-ish dish, almost casserole, for my family and others who have had babies or need meals all the time. My kids really like it too.
4 chicken breasts
Jar of salsa
Frozen corn
Black beans
Place all the above in the crockpot for 4-6 hrs on high
Shred the chicken and mix all together
Roll mixture into whole wheat tortillas and place on greased pyrex pan
Top with a strip of enchilada or taco sauce and shredded cheddar or mexican mix cheese
Bake until cheese is melted and serve
No cream of .... soup and relatively healthy. Plus it is seriously easy.
Another thing that has gotten great reviews when I've taken it to people is white chicken chili. I can give you that recipe if you want it - let me know. I take that with some cornbread.
