    Default Zucchini Muffin Recipes

    I have been looking for a healthy, low sugar zucchini muffin recipe and having no luck. Does anyone have one that they recommend? TIA

    For quick breads I usually use a regular recipe as a jumping off point, cut back on the sugar (for example from 3 cups to 2 or 2 1/2 cups), substitute some whole wheat flour (1/2 and 1/2 is pretty safe for quick breads, but you can go more) and throw in some ground flax.

    Not sure if this os low-sugar, but it is yummy - I have done it as muffins too!

    Makes 3 Loafs (8”x3.75”)

    1 3/4+ C Sugar (almost 2 C)
    3 Large Eggs
    1 C Vegetable Oil (can use 1/2 C oil and 1/2 C Applesauce to be healthier)
    1 tsp Baking Powder
    1 tsp Baking Soda
    1/4 tsp Salt
    1-2 tsp Cinnamon
    1 TB Vanilla
    3 C Flour
    3 C Shredded Zucchini
    1 C Walnuts (optional)

    * Beat together Sugar, Oil and Eggs with mixer
    * Mix together in a separate bowl: Flour, Baking Powder, Baking Soda, Salt and Cinnamon.
    * Add dry mixture to beaten wet mixture and continue to mix.
    * Add Vanilla and mix
    * Add Zucchini and Nuts and mix until combined

    Divide among 3 greased pans and bake at 350* for 45-50 minutes until toothpick comes out clean

    Not sure if this was what you were going for, but they are delicious, and can be made as muffins too. I typed out the recipe as it was written, and put my couple changes in parentheses.

    Double chocolate Zucchini Cake

    3/4 cup oil (I use half oil, half applesauce)
    1 and 1/4 cup sugar (I cut back to 1 scant cup since I added applesauce)
    2 eggs
    1 tsp vanilla
    2 cups grated zucchini
    1/2 cup sour milk or buttermilk (I use regular milk with 1 tbsp of lemon juice)
    3 tbsp cocoa or carob powder
    1/2 tsp baking powder
    1 tsp baking soda
    1/2 tsp cinnamon (I use at least 1 tsp)
    1/2 tsp cloves
    2 and 1/2 cups flour
    Small bag or chocolate or carob chips

    Heat oven to 350 degrees; grease a 9-by-13-inch pan. Mix all ingredients and bake 30-35 minutes.

    ETA: As I was typing this out, I was thinking to myself, 'that really isn't much sugar'. Then I remembered that it also has chocolate chips in it. Whoops! They are pretty tasty though...

    Reading comments this may need some tweaking. Different brands of coconut flour behave a little differently so the liquid amounts may sometimes need to be tweaked.

    I made this the other day in muffin form (cooked 20min). They are DELICIOUS!! And dairy free. My changes in parentheses.

    Double Chocolate Zucchini Bread
    2 large eggs
    1/3 cup honey
    1/2 cup vegetable oil (or apple sauce)
    1/2 cup brown sugar (used a little less, maybe 1/3c)
    1 teaspoon vanilla extract
    1 teaspoon salt
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon espresso powder, optional
    1/3 cup King Arthur All-Purpose Baking Cocoa or Dutch-process cocoa
    1 2/3 cups King Arthur Unbleached All-Purpose Flour (used combination white/whole wheat/almond meal)
    (Added 2 Tblsp flax)
    2 cups shredded, unpeeled zucchini, gently pressed
    1 cup chocolate chips (1/2 c mini chips, probably could have done even less)

    1) Preheat the oven to 350°F; lightly grease an 8 1/2" x 4 1/2" loaf pan.

    2) In a large mixing bowl, beat the eggs, honey, oil, sugar, and vanilla until smooth.

    3) Add the salt, baking soda, baking powder, espresso powder, cocoa, and flour, mixing until well combined.

    4) Stir in the zucchini and chocolate chips.

    5) Pour the batter into the prepared pan.

    6) Bake the bread for 65 to 75 minutes, until the loaf tests done (a toothpick or cake tester inserted into the center will come out clean, save for perhaps a light smear of chocolate from the melted chips).

    7) Remove the bread from the oven, and let it cool for 10 to 15 minutes before turning it out of the pan onto a rack.

    8) Cool completely before slicing; store well-wrapped, at room temperature.

    Yield: one 8 1/2" x 4 1/2" loaf.

    There is one on the 100 Days of Real Food website that is made with honey and whole wheat flour. They're definitely healthy but, as expected, the taste is not the same as the typical sweet zucchini bread I am used to.
