I haven't tried it yet but have both of these bookmarked for the holidays:

    http://www.elanaspantry.com/gluten-free-tart-crust/

    http://www.elanaspantry.com/paleo-pecan-tart-crust/

They are both a tart crust but I may try it with a higher sided pan or just fill a tart pan with a traditional filling.

The other thing you can do is just bake the pumpkin pie in custard cups or in a pie pan without a crust. It saves calories and might go over better than a substitute crust if you're craving the traditional flavor.

Whole Foods sells a really great frozen gluten free piecrust, I think it is sold under their Bakehouse name. I've used it for pies and quiche and it always turns out great! Even the gluten eaters in my house like it
